In short

The San Francisco Baking Institute (SFBI) in South San Francisco is a school of artisan bread, viennoiserie and pastry, founded in 1996 by the French baker Michel Suas. It offers hands-on five-day and two- to three-day workshops for professionals and home bakers, in classes of up to 16 students in kitchens equipped like a modern bakery, as well as online courses and private classes. The school says its intensive programme prepares students for a professional baking career; SFBI also works as a consultant for bakeries.
