In short

ICIF is a professional school of Italian cuisine and wine founded in 1991 to train foreign and Italian restaurant professionals in Italian cooking and products. Since 1997 it has been based in the castle of Costigliole d'Asti, in Piedmont between Monferrato and the Langhe. It offers masters combining classroom training at the school with internships in selected restaurants, as well as professional courses in Italian cooking, pastry, bakery, pizza, gelato, chocolate, Italian wines and food pairing, dining-room service and bartending. The school states that it has had sites abroad in Brazil and China since 2004.
