The Macao University of Tourism (UTM) offers a four-year Bachelor of Science in Culinary Arts Management, formerly a Bachelor of Arts, whose first cohort started in September 2011. Kitchen practicals progress from knife skills, stocks and sauces and the saucier's work with whole carcasses to garde manger, pastry and baking, chocolate work and a semester on 13 major world cuisines, followed by a six-month internship in hotels or restaurants. The final year combines menu development and restaurant-based events with management theory, and teaching includes a simulated restaurant; the university has its main campus on the Colina de Mong-Há and a campus in Taipa.
